Panera Bread Restaurant Recipe

1 loaf Panera Bread French Baguette, thawed
1 tablespoon olive oil
1/3 cup red onion, sliced
6 ounces roasted turkey, slices separated
1/3 cup spinach and artichoke dip, any brand
1/4 cup roasted red peppers, sliced
1/2 cup baby spinach

Heat panini press or oven to 375 degrees. Heat large nonstick skillet over medium-high heat. Add olive oil, then onions, and cook for 5 minutes, stirring occasionally. Add the turkey slices and cook 1 to 2 minutes to warm through. Cut baguette lengthwise into top and bottom halves. Spread each with dip. On bottom half, layer turkey and onions, peppers, spinach, and top half. Slice into 3 sandwiches. Toast in panini press or warm in oven, 3 to 5 minutes.
