Panera Bread (called St. Louis Bread Company in the St. Louis metropolitan area) is a chain of bakery–café quick casual restaurants in the United States and Canada that sells breads, sandwiches, soups, salads, and other bakery items. Panera Bread Recipe
2 tablespoons butter
2 tablespoons all purpose flour
2 cups milk
3/4 cup half and half
1 1/2-2 teaspoons mild hot pepper sauce, such as Frank’s
1 teaspoon Worcestershire sauce
1/2 teaspoon paprika
1 four inch long strip of lemon zest, removed with a peeler
1/2 teaspoon salt
1 pound lump crabmeat, picked over to remove shells and cartilage
1/4 cup crab roe or 2 egg yolks (optional)
2 tablespoons dry sherry
1 teaspoon chopped fresh chives
Melt the butter in a medium soup pot over medium heat. Whisk in the flour and cook until it turns a light tan color, 2 to 3 minutes. Gradually whisk in the milk and half and half until the mixture is smooth.
Grate the onion half on the fine holes of a box grater over a strainer balanced on a measuring cup. Continue grating until you get ¼ cup of juice in the measure. Discard the grated onion pulp. Add the onion juice, hot pepper sauce, Worcestershire, paprika, lemon zest, and salt to the soup pot, and whisk until combined. Bring the mixture to a simmer on medium, and then reduce the heat to low and simmer for 5 minutes.
Stir in the crabmeat, crab roe (if using), and sherry. Cook over low heat for 2 minutes. Remove the lemon zest and divide the soup among warm bowls. Garnish with the chives.
