2 ripe avocados, pitted and peeled
1 tablespoon butter
Juice of 1/2 lime
1/4 teaspoon salt
6 tablespoons light mayonnaise
2 tablespoons chopped fresh basil
1/2 teaspoon chipotle chili pepper powder
8 thin slices Panera Bread Whole Grain Miche, lightly toasted
6 ounces sliced sharp cheddar
2 ripe medium tomatoes, cored and thinly sliced
2 scallions (green part only), finely chopped
1 ounce (1 cup packed) baby arugula leaves
Using a fork, mash the avocados in a bowl. Stir in the lime juice and 1/8 teaspoon of the salt.
Stir together the mayonnaise, basil, and chipotle powder in a cup. Spread the flavored mayo evenly on one side of each slice of toasted bread.
On four slices of the bread, layer the cheese, mashed avocados, and tomatoes. Sprinkle the tomatoes with the remaining 1/8 teaspoon of salt; then layer on the scallions and arugula. Top with the remaining bread and cut the sandwiches on a diagonal. Serve immediately.
