Panera Bread (called St. Louis Bread Company in the St. Louis metropolitan area) is a chain of bakery–café quick casual restaurants in the United States and Canada that sells breads, sandwiches, soups, salads, and other bakery items. This site will provide copycat recipes and recipes using products sold at the Panera Bread restaurants. Chicken Chipotle Panini
1 Tbsp light mayo
1 Tbsp fat-free sour cream
1/8 tsp chipotle chili powder* (or to taste)
1 slice sourdough bread
cooking oil spray
2 ounces cooked chicken breast meat, sliced thin
1 slice turkey bacon, cooked and diced
*McCormick's has this product in the spice section, or you can substitute a like amount of chipotles in adobo sauce, if you prefer. The powder makes less mess.
Mix together the light mayo, f.f. sour cream, and the chipotle powder to create your sandwich spread. Set aside.
Heat skillet or stovetop griddle med. high.
Cut bread in half and spray outside of each half with cooking spray.
Place one piece of bread (sprayed side down) on pan and spread with 1/2 the mayo/chipotle mixture.
Top with the diced turkey bacon.
Finally, spread the remaining sandwich spread on the second piece of bread (non-sprayed side) and place it on top, sprayed side out, and flip sandwich. Toast to a golden brown.
